Charmacteristics and uses: Colorless crystal or white shiny flakes or white crystalline powder. Slight characteristic odor. Taste bitter. Melting point 280-281 oC (decomposition). Instability of the strong acid can lead to demethylation. Soluble in water (5.6g/100ml, 30 oC), warm dilute alcohol, alkaline solution and dilute inorganic acid. The lack of soy protein methionine, DL-methionine supplementation with the nutritional value of close to milk protein. Another yeast containing sodium glutamate in food hydrolysates can increase flavor.
